3 Day Refresh – Day 1

Today I begin the 3 Day Refresh.  I am nervous and excited to see what results it will bring…especially after eating out at restaurants all last week.

Day 1 Measurements –

  • Weight 119.2 lbs
  • Bellybutton & bump at scar – 29.25″
  • Hips 37″

Breakfast was Vegan Tropical Strawberry Shakeology and some cantaloupe; now off to have a green tea

Chicken, Cauliflower Rice & Asparagus

Chicken Qtrs, Cauliflower Rice & Grilled Asparagus

For the “rice”

  • take washed cauliflower and run through grater disc on food processor
  • in a frying pan melt some coconut oil and some butter
  • 2 tsp ginger…we use fresh so may be stronger
  • 1 lemon (juice and rind)
  • 1 heaping tsp of turmeric (I we just kind of do our own thing…we only measure the turmeric)
  • mix it together in the frying pan until the turmeric is all blended in with no chunks
  • then add your cauliflower and cook about 10 minutes
  • server up while hot

Asparagus

  • toss in sesame oil, salt & pepper then grilled to done

Chicken

  • nothing done to it except grilled; we ended up nuking it for a minute as we think our thermometer is on the fritz.
