Day 2 on track

Apart from smacking my head at 3:30 this morning… My day of clean eating went great…

My breakfast yesterday was Shakeology, then 1-2 hrs later sweet potato and 2 boiled eggs… Today it’s Shakeology then 1-2 hrs later egg white and sweet potato….

Today I am having pretty much the same foods… Learn meats and veggies.  Doesn’t seem exciting but they taste good and help with keeping me at a proper weight… Giving me more energy.

Yesterday wasn’t too bad but I find when I get bored I pick… So as long as I keep busy I’ll be good.

Down 2.4lbs > 116
Body fat  down .5% > 26%

Homemade Peanut Butter….mm mm

We haven’t bought any peanut butter or spreads ever since we invested in this blender. Here I used the twister jar to make the peanut butter….

Recipe:
Yields a little over a cup of peanut butter.

Take 2 cups of peanuts and roast at 350 to desired darkness and let cool.

Place in blender* and and blend until desired consistency.

Scrape into jar and let cool (it gets warm in the blender) before placing cover and refrigerate.

*you can most likely use any blender (maybe even a food processor) you would just need to scrape down the sides and blend a few times…

If you find that the butter is too dry you can add a little oil (a tsp at a time) to thin it out… But very rarely do you need to do that.

We even make pumpkin seed butter ❤ , sunflower seed butter, almond butter, pistachio butter, hazelnut spread (like nutella)

3 Day Refresh – Day 1

Today I begin the 3 Day Refresh.  I am nervous and excited to see what results it will bring…especially after eating out at restaurants all last week.

Day 1 Measurements –

  • Weight 119.2 lbs
  • Bellybutton & bump at scar – 29.25″
  • Hips 37″

Breakfast was Vegan Tropical Strawberry Shakeology and some cantaloupe; now off to have a green tea

Chicken, Cauliflower Rice & Asparagus

Chicken Qtrs, Cauliflower Rice & Grilled Asparagus

For the “rice”

  • take washed cauliflower and run through grater disc on food processor
  • in a frying pan melt some coconut oil and some butter
  • 2 tsp ginger…we use fresh so may be stronger
  • 1 lemon (juice and rind)
  • 1 heaping tsp of turmeric (I we just kind of do our own thing…we only measure the turmeric)
  • mix it together in the frying pan until the turmeric is all blended in with no chunks
  • then add your cauliflower and cook about 10 minutes
  • server up while hot

Asparagus

  • toss in sesame oil, salt & pepper then grilled to done

Chicken

  • nothing done to it except grilled; we ended up nuking it for a minute as we think our thermometer is on the fritz.
